1 kg lamb-cut chunks bite size
3 potatoes-quartered

Blend till fine:
5 red onions
5 pips garlic
1" ginger
1" galangal-(wild ginger)
1/2 " turmeric
2 lemongrass-sliced

50gm kurma spice powder
2 stick cinnamon
3 cardamom
3 star anise
3 cloves
3 tbsp roasted coconut-( kerisik)
1 cup coconut milk
1 cup oil
salt and sugar to taste

How to make Village lamb kurma

1.Heat oil, Saute blended ingredients. and spices. Then add kurma powder and kerisik. Stir till aroma.
2.Add lamb meat and coconut milk. Cook almost tender, add potatoes. and seasoning. Cook till potatoes are soft. and gravy becomes thick.
Serve hot with rice.

Kurma is a mixture of spices . that is 2 tbsp coriander, 1 tbsp cumin, 1 tbsp fennel, 1/2 tbsp pepper.
you can also find ready mixed in packet .

Roast coconut (kerisik) is when you fry grated coconut without oil , until they turn brown , grind till fine paste . 1-2 cups grated coconut makes about 3 tbsp kerisik.

    Oooops...I thought by kurma you meant dates. Silly me :p My fave lamb recipe would be red lamb curry (the spicier and hotter the better :D). I also love to add some bay leaves and lime leaves when cooking lamb, to give it some extra fresh scent :)

    When you can't find curry leaves , you can replaced it by bay leaves..
