Sandwich cake with whipped cream

For the cake
60gm butter
60gm sugar
1/2 tsp vanilla
2 eggs-separated
70gm flour
1/4 tsp baking powder
20gm extra sugar

ingredient A:
20gm sweet chocolate
20gm bitter cooking chocolate
30gm sugar
1 cup whipped cream

ingredient B:
1/2 cup whipped cream
1 tbsp sugar

1/2 yolk
1 tbsp sugar
4 tbsp fine sugar

How to make Sandwich cake with whipped cream

1. Cream the butter and sugar till light. Add yolk one at a time, and vanilla. mix well .
2. In another bowl, whisk egg white with extra sugar will thicken.
3. Add the white little at a time to the butter mixture until well mix.
4. Prepare a baking tray 27cm X 27cm with a greased-proof paper. Pour batter evenly in tin and bake at preheated oven at 160 C for 15 to 20 mins.
5. Invert the tray and pull away the paper. Cool.
6. For ingredient A; Melt both the chocolate and add sugar. remove heat and add cream, cool.
7. For ingredient B; whisk the cream and sugar till thicken.
8. Divide cake in half by cutting. Brush sugar syrup over cake then spread chocolate mixture A over one half. Chill for 30 mins to harden.
9. Then spread whipped cream mixture over the chocolate and cover with the other half cake. Chill again for another 30 mins to harden.
10. For topping , whisk yolk and sugar till light and spread over cake. Sprinkle with fine sugar .
11. Using a hot iron bar , warp  it over the sugar to caramelize it. Then cut into square to serve.
