Eclairs Recipe

2cups flour
1/2 tsp baking powder
1 cup water
50gm butter
5 large eggs

Custard :
350 ml fresh milk
3 1/2 tsp cornflour
1/3 cup sugar
25 gm butter
1 tsp vanilla
1 egg yolk

2 tbsp cocoa powder
2/3 cup condense milk
1/4 cup fresh milk
1 tsp vanilla
1/4 cup sugar
3 tsp cornflour
1 egg yolk

How to make Eclairs

1. For the choux pastry:- Bring water and butter to boil. Make a well in the flour and pour all the water mixture at once and stir to a soft smooth dough. Cool. Make a cut at the side like a pocket to fill the custard.
2. Add the egg one at a time , stirring each time until smooth. If dough is not soft enough , add a little water , it must be like a mayonnaise texture. Put in a piping bag. Pipe onto a greased tray giving some space apart.
3. Bake in a preheated oven at 200 C for 30 to 40 mins or until golden and dry.
4. For the custard :-In a pan , bring 250ml milk to a boil, Mix remain milk with sugar, cornflour, and 2 drops of  yellow colouring. Add into the boiling milk and stir till thicken.
5. Add butter and vanilla, stir till smooth. Spoon or pipe into the eclairs.
6. For the topping: mix together and stir under heat until thicken. Dip the surface of eclair. Leave to set and serve.
