Coconut Almond Macaroons


4 egg whites
1 tsp. vanilla extract
1 tsp. coconut or almond extract
1 c. sugar
1/2 c. coconut
1/4 c. toasted, slivered almonds

Beat egg whites until soft peaks form.  Add extracts.  Turn mixer on low.  Add sugar slowly. 

Fold in coconut and almonds.  Drop by rounded teaspoonfuls onto a Silpat, parchment paper or well-greased cookie sheet.  Bake at 300 for 20-25 minutes.  Drizzle with melted chocolate.
