Halibut in white wine and basil broth


2- 4oz Halibut fillets (or other firm white fish)

1/4 c dry white wine

1/4 c chicken stock

1 clove of garlic sliced thinly

2 c baby spinach

1 c cherry tomatoes (sliced in half)

1/2 c fresh basil leaves

1 T olive oil

salt and pepper

How to make Halibut in white wine and basil broth

A fast, healthy, and delicious meal.  Serve with lots of italian bread for soaking up the sauce, and drink the rest of the wine!

1. Pat the halibut fillets dry and season each side with salt and pepper.

2. Heat the olive oil in a non stick pan on med-high heat.  Add the halibut fillets and sear on both sides (about 2 min/side).

3. Add sliced garlic and sautee for 30 seconds until the garlic becomes fragrant.

4.  Add white wine and then chicken stock.  Boil for 2-3 minutes.

5. Add cherry tomatoes, baby spinach, and basil leaves.  Cook just until spinach is wilted.  Scoop into shallow bowls along with broth.  Serve immediately with bread for dipping.
