  • 1 lb Toms
  • 1 Large Potato
  • 2 carrotts
  • 1 onion
  • 1 pint water or stock
  • pinch of salt
  • pinch of pepper
  • 1 tsp tarragon
  • 1 flat tsp sugar

How to make Tomato Soup

My Mums Tommy soup, tastes even better with home grown tomatoes

  1. Plunge toms into boiling water for 3 mins to loosen skins.

  2. Peel off & discard skins

  3. Peel and chop everything and boil in a pan for 20 mins (or 6 minutes in a pressure cooker) until soft.

  4. Mix with food processor or blender until smooth.

Taste. If too sharp, add more sugar and a little cream or milk.

Serve with buttered Baguette or freshly baked bread.

    I roast my tomatoes, skins and all, and then cook everything down together. At the very end I blitz it all together with a hand blender. Talk about a warm blanket of a meal, tommy soup is right up there with mashed potatoes and mac and cheese.
