Salty Peanut Brownies


  • 4 ounces unsweetened chocolate
  • 6 ounces unsalted butter
  • 2 cups white sugar
  • 3 each whole eggs
  • 1 teaspoon vanilla extract
  • 1 cup unbleached all-purpose flour
  • 1 cup peanuts, roasted and (well) salted

How to make Salty Peanut Brownies

Inspired by a certain shortbread cookie at a certain local bakery, I have been adding peanuts to just about everything lately. Behold, a very simple, chocolatey brownie, dressed up with the unlikely but delicious peanut. Mine are looking a tad underdone, but no less tasty.

  1. Preheat oven to 350ºF. Grease and flour your pan.
  2. Melt chocolate and butter together. You may do this in the microwave or over a double boiler.
  3. Stir the sugar into the smooth butter/chocolate mixture.
  4. Beat in eggs and vanilla.
  5. Stir in flour until just combined.
  6. Fold in nuts.
  7. Bake until done, maybe 40 minutes.
  8. Cool; turn out; cut.
