Chicken Rice Bowl


What you need:
  • 1 chicken breast cut into pieces
  • 1 small onion cut into slightly chunky pieces
  • A handful of bean sprouts
  • Mushrooms (optional)
  • 2 tablespoons of mirin*
  • A dash of salt
  • 1 egg
  • About a tablespoon of soya sauce
  • Chicken broth, about 1/4 cup.
  • Brown rice, or any rice you wish to use, cooked.
  • Scallions/green onions
  • Pickled ginger on the side

*Substitution for mirin:
  • 3 tablespoons Shaoxing wine (Chinese cooking wine will do, or any white cooking wine or something... or you can use sake.)
  • 1 Tablespoon of sugar
  • A pinch of salt if you haven't already :)

How to make Chicken Rice Bowl

It's my spin on okayodon, a Japanese donburi dish. (RICEBOWWWL!) So simple and easy to make. :) ... Low calories too if you put less chickens, more veggies and use brown rice. Omit the sugar if you want, but it won't be "Japanese" tasting or something like that... haha.

  1. Put the mirin, soy sauce, salt and chicken broth in a small little pot (a little one) and let it simmer a bit.
  2. Stirfry the vegetables and chicken and then put it in the soy sauce mixture.
  3. Put put egg on top (make sure it is beaten) then let it cook on mixture.
  4. After that, pour on top of cooked rice and nom nom nom. Garnish with pickled ginger and scallions/green onion
