Tofu Peanut Butter Dressing


1 tbsp (15 mL) peanut butter
3 tbsp (45 mL) balsamic or apple cider vinegar
1 tbsp (15 mL) lemon juice
1 1/2 c (360 mL) soft or firm tofu
3 tbsp (45 mL) honey or other sweetener
2 small cloves of garlic (6g)
1 tbsp (15 mL) Dijon or brown mustard  
almond- or coconut- milk for desired thickness

How to make Tofu Peanut Butter Dressing

Place all ingredients in a blender and blend until smooth.

    Yep! I actually tried it on a pita chicken sandwich yesterday, too, and it was great (I had made it a little thick, although as I mention in the ingredient list, you can just add a little more milk to thin it out) I've been playing around with homemade dressings lately and this is one of my favorites now.
