Sobrecostilla asada / Brisket BBQ

Ingredients

  • 1 trozo de sobrecostilla, aproximadamente 1, 35 kg.
  • Sal a gusto

  1. Limpiar la parrilla con un cepillo metálico, hasta que todo el óxido y grasa quemada salga. Mientras tanto, poner 2,5 kilos de carbón de madera en el quincho, en forma de pila. Encender el carbón con un combustible orgánico (por ejemplo, una mecha de servilleta de papel con aceite vegetal).
  2. Cuando el carbón está completamente encendido, repartir la pila con una pala o un fierro, de manera de cubrir completamente el fondo del quincho. Poner la parrilla sobre el quincho y calentarla por 5 minutos.
  3. Poner el trozo de sobrecostilla sobre la parrilla. Sellar la carne, y luego darla vuelta. Echar sal sobre el lado asado. Repetir el proceso hasta que todo el trozo esté sellado.
  4. Dejar que la carne se cocine lentamente, dando vuelta el trozo cada 3 o 4 minutos, hasta que la carne llegue al punto de cocción deseado (a la inglesa, término medio o bien cocido).
  5. Cortar el trozo en pedazos de unos 125 gramos. Servir caliente con papas cocidas y ensalada.

  1. Clean your grill with a metallic brush, until all the old fat and burned material is off. Meanwhile, put 5 pounds of wood charcoal on the fire place, as a pile. Light the charcoal with an organic fuel (i.e. a paper napkin moisted with vegetable oil as a wick).
  2. When the charcoal is fully on fire, spread the pile with a shovel or a metal stick, in order to cover all the base of the fireplace. Put the grill over the fireplace and warm it for five minutes.
  3. Put the brisket piece over the warmed grill. Seal the meat, and then turn around the piece. Spread salt over the burn side. Repeat the process until all the piece is grilled.
  4. Let the meat cook slowly, turn the piece every 3-4 minutes, until the meat gets the point that you like (bloody, middle or well cooked).
  5. Cut on 6 oz. pieces. Serve warm with boiled potatoes and salads.
