Ingredients
- 1 cup self raising flour
- 1 cup plain flour
- 1/4 cup butter
- 1/4 cup sugar
- 1 egg
- 1/2 cup milk
- 1/3 cup sultanas
Instructions
- Sift flour and s/r flour into a large bowl (sifting optional)
- Rub butter into flour
- Mix in sugar
- Add egg and milk, mix until consistent
- Add sultanas and mix for 30 seconds to a minute to spread sultanas through the mixture
- Spoon onto a baking tray
- Bake at 200ºC for 20 minutes
- Makes about 18 small or 8 large rock cakes
