Celery pesto


70 gr green fresh celery leafs
30 gr finnely ground almonds
20 gr pine nuts
salt (to taste)
olive or corn oil

How to make Celery pesto

Place celery in a colander and wash well under a cold water. Put everything without the oil in the food processor and turn on high spead to reduce everything into almost purea. With the engine still on, start to add oil until it reaches the consistency of the original basil pesto. Transfer into a 330 gr sterilized jar. Keep in the refrigerator.
This pesto is great with the pasta, potatoes roasted in the oven and as a filling for chicken rolls. You can spread crostoni too with this pesto. It goes well with everything.

    How creative. I never thought of making pesto with anything other than basil as the base. Nice!
