South Asian Pork Soboro


  • 1 medium pack of minced pork
  • a cluster of shimeji mushrooms, roughly chopped
  • 4 or 5 stalks of spring onions, chopped
  • maggi seasoning
  • kecap manis
  • white pepper
  • mirin
  • maggi chili sauce
  • ginger and garlic, finely chopped
  • handful of chopped peanuts
  • sesame oil

How to make South Asian Pork Soboro

"Tori Soboro" is a Japanese dish made with minced chicken. This is a South Asian-influenced version, made with pork. It is a comforting, sweet-savoury dish that is best served simply on top of steaming white rice.

I'll admit that this is a dish I threw together mostly out of pantry ingredients...but it turned out tasty :)

Makes 2 portions.

  1. Fry together the pork, ginger and garlic in a wok with a little oil. Add a splash of mirin, a glug of kecap manis and chilli sauce, and a liberal dousing of maggi seasoning.

  2. Add the chopped shimeji mushrooms (you can substitute another variety of asian mushroom if you cannot get shimeji). Move around the wok until the meat is cooked through.

  3. Turn the heat off. Stir through the chopped spring onions and chopped peanuts. Drizzle a little sesame oil, season generously with white pepper and give everything a good stir. Heap onto bowls of rice.

    Damn this looks good. If you want to go with your meat + fruit theme, I can see this with a bit of chopped up dried apricots.

    Looks really good, kecap manis is a magic ingredient! Question: maggi chilli sauce - is it the sweet or garlic one?

    if i dont have maggie seasoning... what can i use as substitute? can i just add more kecap manis? thank you

    hmmm good question. maggie seasoning is quite salty and kecap manis is quite sweet, so if you want to use something as a substitute for maggie seasoning just use soy sauce. but it will taste different - you need the seasoning!

    Tried it with a čevap čiči mince (equal parts pork, lamb, beef), worked a treat.

    Seeing mince on rice makes think of making a mapo dofu donburi. That woud be delishhhus.
