Veggie Soup

  • 1 large zucchini
  • 1 medium carrot
  • 1 large onion
  • 1 large potato
  • 1 can chopped tomato
  • 6 cups milk(or chicken broth, veggie broth)
  • salt & pepper & Italian seasoning

How to make Veggie Soup

after eating too much meat, need something light and healthy for body and mind

  1. chop all veggie into little cube

  2. use a big pot, in medium high heat, add some olive oil , put onion first, until soft then add carrot in, give it a stir, about 3 mins, add zucchini and potato, stir all together, cook few mins.

  3. pour broth in, when it boil, add tomato into the soup, turn down the heat to low, let it simmer 15-20 mins.

  4. add salt, pepper and seasoning to taste.

    With the milk version, I feel like I want to add some crispy bacon bits to the finished dish. But i'm sure it's still good without it!
