How to make Okara Stir Fry

Okara is a cheap but very nutritious byproduct from the tofu making process. It's good as an accompaniment to other dishes and in my opinion could be a replacement for rice, mashed potatoes or couscous.

Step 1: Heat up olive oil in a pan. Add the pork and cook until well-cooked.

Step 2: Add sliced cooking onions, celery, carrots and cook until soft.

Step 3: Add soya sauce, oyster sauce, mirin to taste. Add in the okara. Note that the okara will soak up all of the available sauce. It may be necessary to add additional soya sauce etc as okara has no taste of it's own.

Step 4: Add the green peppers adn chinese parsley. Cook until everything mixed well.

Step 5: Add sesame oil and serve.
