  • Tuesday's chicken carcas
  • cilantro
  • coarse salt, pepper, red chili powder
  • scallions or green onion, chopped
  • red bell pepper, choped
  • celery (young leafy bits are best)
  • lime
  • mayo
  • fresh garden greens

How to make Left OVer Thursday

  1. wrestle down carcas and pry all the horrid bits off you were to lazy to pull off when the damn thing was still hot
  2. in bowl, combine chicken with seasoning, scallions, onion, pepper, and celery
  3. squish and roll lime about on counter to release juices. add as much zest (rind) from lime to bowl as possible (if you don't have a zester, drag a fork across peel). cut lime in half and squeeze out all the juice. STIR IN LIME RIND AND JUICE, SET ASIDE IN FRIDGE.
  4. DO NOT ADD MAYO UNTIL JUST PRIOR TO MEAL TIME. serve over bed of fresh greens.
