Ma Po Tofu 麻婆豆腐


  • 1 pack firm tofu
  • 1-2 tablespoons oil
  • ground beef/pork/
  • 2-3 tablespoons chilli bean paste
  • 1 tablespoon Yangjiang fermented black beans
  • 1-2 dried chillies, rinsed & sliced in half (optional, depending on level of spice desired)
  • a sprinkling of ground Sichuan pepper
  • 1 cup chicken stock or water
  • light soy sauce to taste
  • sugar, to taste
  • arrowroot flour, mixed with water to give a cornstarch-like mixture (or just use cornstarch)
  • sliced scallions, for garnish

How to make Ma Po Tofu 麻婆豆腐

recipe adapted from various sources, but primarily fuchsia dunlop's version. this is a warming dish perfect with a bowl of softly scented jasmine rice. for a vegetarian version, omit the ground meat or substitute TVP chunks.

  1. cut up the tofu into cubes or slice however you wish; leave to sit in a bowl of hot, lightly salted water.

  2. heat the oil in a wok. add the ground meat & stir-fry until just cooked (don't overdo it, as it'll lose its juiciness).

  3. add the chilli bean paste to the wok; stir-fry until heated through. Add the fermented black beans and dried chillies (if using); stir-fry until fragrant (about half a minute should do it).

  4. pour in half of the water/chicken stock. add the drained tofu. gently stir in the tofu, making sure not to break it up but allowing it to be thoroughly mixed with the rest of the ingredients.

  5. season with sugar & soy sauce to taste; add the rest of the water/stock to desired consistency.

  6. turn the heat down to low. add the arrowroot flour mixture (this is for the texture & mouthfeel of the dish), 2 or 3 tablespoons should do it. add this a little at a time, as you don't want to add too much. mix well, until the sauce has thickened.

  7. sprinkle over the sliced scallions and sichuan pepper. gently mix everything together again.

  8. serve hot.

    You did well there! The last time I made ma po tofu with the silken type, it became a mushy mess.
