Really Hot Hush Puppies


  • 1 cup cornmeal (the yellow one; white one's for yankees)
  • 1/2 cup flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp red pepper
  • 1 cup of shredded cheese
  • 1 canful of green chillies
  • 1 1/2 tbsp minced onion
  • 3 eggs (I like eggs; you only need 1 or 2)
  • 1/2 cup of milk
  • a lot of oil (olive oil if you can spare it; vegetable oil most common; lard makes your butt stick out)

How to make Really Hot Hush Puppies

Combine everything except the eggs, milk, and oil and mix it all up. Put in the eggs and milk and mix that up, too. Pour oil to 4 inches (you only need 3 though) into a Dutch oven and heat to 375 degrees (this part is a little tricky). Drop the mixture with a rounded tablespoon one at a time. Wait til golden, and you've got delicious, super spicy hush puppies. Serve immediately. Very good if served with catfish nuggets.
