Cheaterbug Tiramisu


  • 16 sponge fingers (the sugared kind work best here)
  • vanilla bean ice cream
  • 1 shot of espresso
  • a splash of kahlua (optional)
  • cocoa powder for dusting

How to make Cheaterbug Tiramisu

This is a great way to throw together a dessert that tastes and looks great, and literally from start to finish takes about 5 minutes. Unless you're super slow with the ice-cream scoop. It's my cheat-version of tiramisu, and since I first made the real kind of tiramisu and fell in love with sponge fingers, I always made sure to have them around the house. (Serves 4)

  1. Brew the espresso, and let it cool, then mix in a splash of kahlua, or any other type of liquer, if using.
  2. Lay 4 sponge fingers on a dessert plate, sugared side up, and drizzle or brush the espresso over.
  3. Get a pretty scoop of vanilla ice cream, place it on top of the sponge fingers, then dust cocoa powder over and serve immediately.

Note: Sponge fingers practically melt with the espresso, and I find that it gives a nice twist to not soak them through in this dessert - that way you get a bit of bite and crunch. Also, I opted not to sweeten the coffee, since the sponge fingers are sugared. If you're using the un-sugared variety, sweeten the coffee to taste.

    To make them even more coffey, I like to brew the espresso, let it ool a bit and use the espresso as water to brew another espresso. This double-brewed espresso is extremely strong and diluting it with the liquor does not reduce the coffee "twang" in the tiramisù.

    alice: wah, sounds awesome! i think i'll try that next time.. have a siphon i can use for the second brewing. i don't think my espresso machine would take too kindly to that. :p
