How to make Chicken Fried Rice

The trick to this recipe is in the preparation of the chicken.  For the best results, what you need to do is bake the chicken in a dilute soy sauce mixture or a soy based soup starter kind of concoction.  You'll be able to find something like that at a Japanese market.  Place your dark meat pieces in a glass baking dish and add in the liquid soup base, enough to cover the bottom at about 1/4".  This will keep the chicken tender while baking.  Salt and pepper the chicken to your liking.  

Start making your rice, once it is done let it stand uncovered while you prepare everything else.
Get your garlic and red bell pepper going with some sesame oil.  Saute them up until they are at optimum tenderness.

When the chicken is done let it sit for about 7 minutes or so.   Then take it off the bone and chop it up nicely.  
In a large pan head up some sesame oil and canola oil together to a pretty high temp.  Toss in the rice, add some soya sauce and a wee wee bit of fish sauce.  That stuff will ruin the dish if you add too much, and there is no turning back once you have.  So, add, taste, add, taste. 

Add the chicken and get things mixed up a bit.  Add in your sauteed bits with the green peas that have been thawed.  Next, add in the left over reduced liquid from the baking pan.   Get all that happy together in the pan on some high heat.  Stir it up nicely and you you'll have some really nice fried rice.
