Fried Bananas


4 firm, ripe bananas
vegetable oil for deep-frying
caster sugar for sprinkling

1 cup rice flour
1/2 tsp baking powder
3 tbsp caster sugar
2/3 cup water
2/3 cup beer

How to make Fried Bananas

sift the flour and baking powder into a bowl

add the sugar and beat in a little water and beer to make a smooth paste

gradually beat in the rest of the water and beer to form a thick batter

let stand for 20 minutes

peel the bananas and cut the in half crosswise, then in half lengthwise

heat enough oil for deep-frying in a wok or a large, heavy pan

dip each slice of banana into the batter, making sure it is well coated

carefully slip into the hot oil

use tongs or chopsticks for turning, making sure all sides are a golden brown

drain the bananas on kitchen paper and sprinkle with sugar

serve immediately and eat hot
