3 cups plus 2 tbsp flour
1 tbsp instant yeast
1/2 tsp salt
1/4 cup sugar
600gm sweet potatoes, peeled and boil till soften.
pinch nutmeg
1/2 tsp cinnamon
2 tbsp butter
1 tbsp evaporated milk

For the fillings:
3/4 cup milk powder
1 cup flour
1/2 stick butter
1 tsp vanilla
1 tsp baking powder
1/2 cup fine sugar
1/2 egg. beaten.

Another 1/2 of the egg used for egg wash.

How to make sweet potato crispy top doughnut

1. For the dough:- drain the water after boiling the potatoes , mashed fine.
2. Mixed all the ingredients to form into a soft dough. Place on a greased bowl and leave to rise.
3. For the filling:- Beat butter with sugar till pale with a spatula. Add vanilla and egg.
4. Add the milk , flour and baking powder. Form into a soft non sticky dough.
5. Cut the sweet potato dough into 8 equal size for large doughnut, YOu can cut smaller into 10 or 12 portions. Divide the milk dough equally too.
6 .Shape each sweet potato dough into a ring like a doughnut. Place one portion of the milk dough on top of the potato dough, seal it neatly, making sure id cover up the ring. leave to rise for 1/2 hour. Brush top with beaten egg.
7, Bake in a preheated oven at 220 C for 20 mins or until golden.
