1. For the dough:
4 cups flour
1 tbsp yeast
1/2 tsp salt
40 gm sugar
1/2 cup milk powder
1 cup (200 ml) warm water
1 egg

For the pastry dough:
3 tbsp milk powder
60 gm icing or fine sugar
1 tsp vanilla
125gm butter
1 egg
150gm flour

Egg wash:
1 egg-beaten

For the filling:
200 gm red beans - boiled to soften
180gm sugar
2 tbsp butter
1 tsp pandan paste or essence

How to make Red bean baked bun with pastry topping

1. For the dough:- mix all the ingredients except butter to an elastic dough and then add butter and knead again will non sticky. Leave to rise.
2. Cut dough into 12 equal pieces and roll into a ball.
Fill each ball into red bean paste. Seal and leave aside.
3. Using a clean bowl. Whisk butter and icing sugar till light, Add egg and vanilla. Add milk powder and flour and combine well to a soft dough and non sticky. Divide into 12 equal portion.
4. Flatten the pastry and place on top of the red bean dough. Leave to rise , about an hour and half.
5. Brush top with egg wash and bake in a preheated oven at 225  C for 15 to 20 mins until golden brown .
6. Brush top with extra butter and serve hot.

to make the red bean paste, Boil the beans with pandan leaves and 3 cups water  till soft and then blend to fine paste. Heat a wok with butter and then pour paste into it and let boil for 5 mins and then add sugar. Let to boil but stir occasionally till very thick and like a paste. Keep refrigerate if not in used.
