Pumpkin pie

For the pastry:
2 cups flour
150gm cold butter
1/8 tsp salt
1 tbsp brown sugar
1 egg yolk
1/4 cup or less cold water

For filling:
800gm pumpkin- peel- boil to soften
1 cup evaporated milk
1 1/2 cup brown sugar
1/8 tsp nutmeg
1/4 cup butter-melted
2 eggs
1 egg white
1 cup flour
1/2 tsp cinnamon

How to make Pumpkin pie

1.For the pastry:-Mix flour with butter and crumb it fine. Add brown sugar and mix well, Add yolk and enough water to form a soft dough. Place in cup cake tin.
2. Put pumpkin in a blender with milk and eggs, blend till puree.
3. Pour into a bowl and add nutmeg, cinnamon, melted butter and flour. Mix well and smooth.
4. Pour batter into pastry case until full. Bake in a preheated oven at 200 C for 35 to 40 mins.
5. Serve warm or cool.

The remaining batter which do not have any case to fill, you can just put it in a greased muffin tin and bake the same way.
