Pineapple cucumber salad

1/2 pineapple-sliced
1 cucumber- sliced or cut into finger size
1 carrot- cut in match stick
1 tsp salt
1 tbsp sugar
2 limes- extract juice
1 chilly-sliced
2 slices ginger
1/2 red large onion-sliced

How to make Pineapple cucumber salad

This salad is nice to eat with chicken rice.

1. Add 1 tsp salt to cucumber and carrot, squeeze them and drain the excess water.
2. Add to pineapple and the rest of ingredients. Leave for 5  mins before serve.

    I usually make a simple cucumber salad I got from a Kylie Kwong recipe - cucumber with sugar and salt for 20 mins, drain and then add sesame oil and light soy sauce.

    i am not sure about your recipe with soy sauce but my recipe which I mixed with pineapple add up the sour taste and the onion with chilly and ginger for the spicy taste. the sugar is just sweeten the pineapple and this salad go well with chicken rice.

    I will try your recipe this weekend as I love cucumber salad. I also like the korean-style cucumber salad (no pineapple but lots of chilli).

    I made this today, and everyone loved it. It is so easy to make that I'll probably make this again in a few days :-)
