For the base:
2 eggs
1 egg white
2 tbsp sugar
3 tbsp flour
1/2 tsp baking powder
1 tbsp butter, melted
1/2 tsp vanilla

Ingredient A
1/4 cup caster sugar
1/4 cup water
1 tsp lemon juice

For the mousse:
3 egg yolks
20gm sugar
1/2 cup syrup from canned mandarin orange
1 tbsp gelatin
3 tbsp cold water
1 1/2 cup whip cream
1 tsp sugar
1/2 tsp  orange zest

For topping:
12 segments mandarin orange- keep dry on towel
60gm caster sugar
3 tbsp water
1 tbsp millet jelly
pinch of fine sugar
6 tbsp marmalade jam

for sauce:mix together
1 tbsp orange juice
1/2 cup whip cream

How to make mandarin mousse

1.For the base:Whisk eggs and sugar till thicken. Add flour and baking powder.Stir well. Add butter and vanilla. stir to mix. Pour into paper lined greased tray and bake at 180 C for 20 mins. Cool.
2. Cut Cake with a round cutter about 2 inch high , you will need 12 cutters.Leave the cake in the cutter as a base. The remain cake, crumble it for garnish later.
3.Bring ingredient A to boil to dissolve sugar.Brush over the base of cakes.
4.  For the mousse: Add water little at a time to dissolve gelatin.
5. Whisk egg yolks and sugar to dissolve , add gelatin syrup and stir. Add syrup from canned mandarin and bring to boil. Stir constantly. Sieve while still hot.
6. Add half of the whip cream to yolk mixture and stir well. The remain cream , whip with sugar till thicken .
7 Combine the whipped cream with yolk mixture . Add zest and carefully mix it. Fill up the casing with the sponge base and chill for 30 mins.
8. Toss mandarin segments in sugar till well coated.
9 Remove cutter from mousse and place on tray with the cake crumbs. Coat the side with cake crumbs.
10 . Spread top with marmalade orange and place a segment of mandarin too.
11. Place cake on serving plate and spoon some sauce at the surrounding.
12. Serve chill.
