1 pkt-(250gm) Arnott's shortbread biscuit
125gm unsalted butter, melted
1 punnet (150gm) raspberries
1 punnet (150gm) blueberries
2 kiwi fruits- sliced thinly
1/2 cup apricot jam, warmed and sieved

3/4 cup caster sugar
1/8 cup cornflour
2 tsp vanilla
5 egg yolks
2 cups fresh milk

How to make Fruit Flan

1.Grease a shallow loose bottom tin 24 cm . Process the biscuits into fine crumbs.
2. Mix with butter and press firmly in the flan tin. Chill while preparing filling.
3.Combine the custard ingredient till well blend and stir under low heat till thicken.
4. Strain in a bowl and cover with a plastic to cool, Spread over flan.
5. Arrange fruits over custard and brush with jam. Keep chill.

Let flan start at room temperature before cutting .
