250gm butter
1 egg
1 yolk
60gm fine sugar
1 tsp vanilla
400gm flour
40gm cornflour or custard powder
pinch salt

2 pineapple-blended fine
500gm sugar
3 cloves
3 cardamom
1 (2") stick cinnamon

1 egg-beaten

How to make Chinese pineapple rolls

1. Beaten the butter, sugar and eggs till pale.
2. Add vanilla. sieve the flour , cornflour and salt.
3. Add in flour 1 cup at a time and knead to a soft dough.
4.Using a zig zag cookie nozzle, pipe out the dough and lay a small piece of pineapple jam and roll
5. Arrange on greased tray .
6. Brush with beaten egg.  Bake in preheated oven at 200 C for 20 mins or till golden.

To make filling:
put all in a wok and cook till thicken and dry. stirring well. the jam must be dry enough to roll into small balls , smaller than a marble. Stick inside the rolls.
