vitamin boost soup


  • 100g watercress
  • 200g spinach
  • 1 cup peas
  • 1 white onion
  • 1 small potato
  • 2 large cloves garlic
  • 1 litre stock (veg or chicken)
  • To serve: seasoning, olive oil, milk/ cream or creme fraiche

How to make vitamin boost soup

  1. saute onions and garlic in a little oil
  2. saute thin slices of potato 
  3. add green leaves and peas (reserving some spinach)
  4. cover with stock and simmer for 5 mins
  5. add rest of spinach
  6. season (lots of black pepper)
  7. blend in a food processor
  8. check seasoning

    This sounds so sexy to me..... I would love to try this one!!! How is the taste actually? Is it yummy? I love vegetables but I don't like to feel as if I am a caterpillar ;]
