Goat Cheese Stuffed Portobello Mushrooms


4 Large Portobello Mushrooms
1/2 Medium Yellow/Cooking Onion
3 Cups Pre-washed Spinach
1 tspn Italian Parsley, Chopped 
1 small Red Chili Pepper, finely sliced
Olive Oil

How to make Goat Cheese Stuffed Portobello Mushrooms

Pre-heat over to 300F.  Prepare a baking pan by greasing the bottom of the pan.  Take the stems off the mushroom and take a wet cloth and clean the mushroom caps.  Place them in baking pan and set aside.

While the oven is preheating, in a pan add olive oil and chopped onions and cook on medium heat until onions are translucent.  Add spinach and parsley and cook until tender, about 10 minutes.

Remove from pan and spoon spinach mixture on top of mushrooms.  Top with goat cheese and few slices of red chili and place in oven for 10-15 minutes until mushrooms are tender.

Remove and serve immediately.

Makes a perfect pre-meal appetizer or as a great side to beef or pork.
Serves 2.
