Chicken Adobo


  • chicken cut into pieces (i used dark meat here since i like it. you can use whichever you prefer)
  • chicken liver (optional)
  • 1 cup of water
  • 1/2 cup soy sauce
  • 1/4 cup vinegar (plain white vinegar would do)
  • 1 tsp. garlic powder
  • 1 head garlic minced ( yes a whole head! you can reduce amount if your not a garlic person)
  • 1 1/2 tbsp liver spread
  • salt and pepper to taste

* I used about a kilo of chicken here and half a kilo of chicken liver. Feel free to alter according to your liking. This recipe could apply to pork also or even a combination of both meats. Would be yummier tasting actually.

How to make Chicken Adobo

  1. In a pot mix water, soy sauce, vinegar, garlic powder, salt and pepper.
  2. Put the chicken and chicken liver in and let marinade for at least 15 mins.
  3. Boil the chicken in marinade until it changed color but not fully done. Take the chicken and liver out. Put in a plate and set aside.
  4. Add the liver spread into the sauce and let it boil for about 15 mins to reduce and concentrate the flavors.
  5. Heat some oil in a pan and fry the chicken. No need to fry them for long. Just a quick fry to give them some color but don't get them burned.
  6. Leave a little amount of oil in the pan after frying the chicken. Add in the minced garlic and brown for a couple of seconds. Add in the chicken liver. Toss it around then add about a ladle or two of the sauce just to deglaze the pan. Transfer everything to the sauce pot.
  7. Add in the chicken and let it boil for about 10 minutes or until chicken is fully cooked. Adobo is best eaten the day after but the heck! Its yummy anyways so enjoy!
