Tomato Soup


  • 1 kg ripe tomatoes
  • 3 leeks
  • 1 large onion
  • 2 garlic cloves
  • 1 liter vegetable stock
  • 5 tablespoons of tomato paste
  • 2 tablespoons dried marjoram
  • sour cream (optional)
  • salt and pepper
  • olive oil

How to make Tomato Soup

Not much to say to a this nice comfort food just for about anytime.

  1. chop up the onion and garlic
  2. add some olive oil into a pot and heat up
  3. add the onion garlic and let it sweat a bit
  4. chop up the leeks and add to the pot
  5. stir and sizzle for 5 minutes
  6. chop up the tomatoes and add to the pot
  7. let it come to a boil
  8. add the vegetable stock and marjoram, let it come to aboil once again
  9. reduce heat and simmer with the lid on top for about 30 minutes
  10. take off the heat and blend with a hand blender then sieve with a mesh strainer or colander
  11. put it back into the pot and reheat if necessary
  12. season with salt and pepper
  13. serve with a splash of sour cream
