Tarator (Bulgarian Cucumber Soup)


  • 1 cucumber
  • 1 garlic clove
  • 1 cup of Greek Yogurt
  • 4 spoons of olive oil
  • 2 spoons of white wine vinegar
  • salt
  • dill
  • 2 cups of cold water

How to make Tarator (Bulgarian Cucumber Soup)

This cold soup (Таратор) is another refeshing and healthy summer dish. There are many regional varieties of this dish, this is  an approximation of the  Bulgarian type.

  1. peel the cucumber
  2. put 2/3 of the cucumber with the rest of the ingredients into blender
  3. blend until liquid
  4. cut rest of the cucumber into small cubes
  5. add the remaining cucumber pieces to soup
  6. add salt to taste
  7. serve cold
  8. Also add some finely chopped nuts if you want

    Hooray! I always add a handful of raspberries to the blender, then top with walnuts. Добър апетит!

    And if you'd like to make it as a traditional Bulgarian Tarator - then add chopped fresh dill, minced garlic and a dash of olive oil. Yum!
