- 4 hardboiled eggs
- half a kilo (1 pound) boiled potatoes
- 5 boiled carrots
- 200ml mayonnaise
How to make Special Ensaladilla
This is a variation of a so called Ensaladilla Rusa, which is served as a tapa in Spain. The original Ensaladilla is made with more ingredients and mostly without eggs, but I prefer this variety. Just don't complain about this not being the "original" one :)
- Cut up the eggs, peeled potatoes and carrots into small dices
- Mix all together with the mayonnaise
- Serve cold.
