Special Ensaladilla


  • 4 hardboiled eggs
  • half a kilo (1 pound) boiled potatoes
  • 5 boiled carrots
  • 200ml mayonnaise

How to make Special Ensaladilla

This is a variation of a so called Ensaladilla Rusa, which is served as a tapa in Spain. The original Ensaladilla is made with more ingredients and mostly without eggs, but I prefer this variety. Just don't complain about this not being the "original" one :)

  1. Cut up the eggs, peeled potatoes and carrots into small dices
  2. Mix all together with the mayonnaise
  3. Serve cold.
