Spanish Lemon Salad


  • 1 lemon
  • 2 oranges
  • 100 g Chorizo style paprika sausage (cold cut variety)
  • 2 eggs
  • 1 garlic clove
  • olive oil
  • salt
  • a dash of red wine (optional)

How to make Spanish Lemon Salad

This pretty unusual dish known as "Ensalada de Limón" comes from the Hurdes region in Extremadura, Spain and was originally served to fieldworkers at midday to gather strength through the vitamins and proteins. (If you don´t like the taste of pure lemon in your mouth I suggest to squeeze the lemon and use the juice instead of putting in lemon slices)

  1. Peel and slice lemon and oranges into thin slices
  2. cut the Chorizo cold cut into slices
  3. crush the garlic, put it on top of the citrics together with the Chorizo sausage
  4. fry the two eggs, leave the yolk pretty liquid
  5. put the eggs on top of the oranges and the Chorizo
  6. add olive oil and salt to taste
  7. before you eat, cut up everything in the bowl, so that the yolk mixes with the citric juice to make up the dressing
  8. If you like add a dash of red wine to the salad
  9. serve at room temperature

    I like the sound of this! Really nice for summertime. Although I might be inclined to add some prosciutto.
