How to make Pork with Sugar Snap Peas, Chilli & Mint

Had some sugar snap peas which needed eating one evening. I had come across a recipe that used the peas and some pork loin and it formed the basis for this dish, although in reality mine turned out completely different.

  1. Heat the wok and add some oil (groundnut is best)
  2. Add the pork and stir fry till the outsides are cooked and browned
  3. Add the sugar and dissolve in the liquid that's formed, then add the fish sauce
  4. Add the chilli, peas and mint, adding a little more water if it needs more liquid
  5. Stir fry for a couple of minutes then add some straight-to-wok noodles
  6. Stir those in for another minute then serve
