Lemon Poppyseed Muffin

Ingredients
  • 125 g butter, softened
  • grated rind of 1 lemon
  • grated rind of 1 orange
  • 2/3 cup caster sugar
  • 2 eggs
  • 2 cups self raising flour
  • 1/2 tsp baking powder
  • 1/2 cup milk (+ a little bit if the dough is too dry)
  • 1 tbsp lemon juice
  • 2 tbsp poppyseeds
Instructions
MAKE 12
  • Cream butter and sugar with an electric mixer
  • Add eggs, rinds, sifted flour, baking powder, mix well
  • Add milk and lemon juice, beat until mixture is just changed in colour
  • Stir in poppyseeds
  • Spoon mixture into prepared pan, Bake at 200 C for 20 minutes
  • Good on its own or can be served with custard
