Brown Sugar Walnut Muffins


  • 2 cups rolled oats
  • 1 cup whole milk (or substitute: I use ricemilk with perfectly decent results.)
  • 1 1/2 cups brown sugar
  • 4 ounces butter, melted
  • 4 ounces eggs (that's usually 2 whole eggs)
  • 1 Tablespoon and 1 teaspoon baking powder
  • 2 cups unbleached all-purpose flour
  • 1 cup toasted and chopped walnuts

How to make Brown Sugar Walnut Muffins

Hearty without being heavy, these muffins best consumed the day they are baked. As if you could wait.

  1. Mix oats, milk and sugar. Let sit five minutes.
  2. Stir in cooled melted butter and eggs.
  3. Mix in dry ingredients until just combined.
  4. Fold in nuts.
  5. Spoon into muffin cups and bake at 350ยบ F until an inserted toothpick emerges clean.
