Sinigang na baka (Beef Tamarind Soup)


  • Stewing beef (About a kilo-ish)
  • 12 BIG Tamarinds (or more, if you like it really sour).
  • 1 Large sized onion, chopped.
  • 3 big tomatoes, cut into quartered pieces.
  • 1/2 cup of daikon radish, cut into coins, then quartered pieces.
  • A bunch of STRING green beans, cut into 1 inch long pieces.
  • A handful of okra
  • 4 Green peppers
  • About 7 cups of water
  • Salt and pepper to taste, or fish sauce.

How to make Sinigang na baka (Beef Tamarind Soup)

Sinigang, like my mommy used to make. My mom finally gave me the recipe, and I think this is much more satisfying (but more work) than a tamarind mix.

  1. First, boil the tamarind, pound the juices out of it and strain. Leave it for now.
  2. If you're using a pressure cooker, add the water, the stewing beef, onions and tomato. Pressure cook for about 45 minutes. If you're using a regular pot, put the above ingredients in a pot to simmer for 1 hour or until the meat is very tender.  Remove any scum from the beef.
  3. When it's tender, put the tamarind juice in, let it simmer for a few minutes.
  4. After simmering, add the remaining ingredients till the vegetables are fully cooked.
  5. Serve immediately with rice, and use fish sauce/nuoc nam as a dipping sauce. Enjoy.
