Crunchy Melting Moments


  • 250 g butter
  • 125g margarine
  • 135g castor sugar
  • 1 egg
  • 1 tsp vanilla essence
  • 475g flour
  • 3tsp baking powder
  • 200g cornflakes (grind a portion and gently crush a portion)

How to make Crunchy Melting Moments

A crunchier version of the Melting Moments Cookies.
  1. Sift the flour and the baking powder together.
  2. Cream the magarine and sugar till light and fluffy (this is essential, make sure it's really light)
  3. Gradually add in a beaten egg. Add vanilla essence after.
  4. Fold in the sifted flour and mix well to form a soft but dough. Not too soft, just the right texture to shape into rounds later. Add in milk if it's too dry or flour if it's moist.
  5. Shape teaspoonfuls of the mixture into rounds and roll them in the grounded cornflakes.
  6. Roll them with more pressure in the gently crushed cornflakes and flatten slightly. 
  7. Place on greased baking trays.
  8. Bake in preheated moderate oven for 15-20 minutes.
  9. Remove and cool on a wire tray.

When they're cool enough, you can pack them in containers. 
Hope you enjoy this recipe. It really melts in your mouth. Then grounded cornflakes form this crunchy and thin outer layer of the cookie and the crushed cornflakes gives each bite a crunch.
