-1 lb Vine Ripened Organic Tomatoes -12 Leaves Fresh Basil -6 Tablespoons Extra Virgin Olive Oil -1 Teaspoon Sugar -Freshly Grated Black Pepper -1 Teaspoon Sea Salt -2 Tablespoons Balsamic Vinegar -1 Medium Ripe Avocado -8 Ounces Goats Milk Feta -12 Stoned Black Olives -3 Tablespoons Pine Nuts

How to make Organic Tomato Salad

With a small sharp knife, put a cross at the stalk of each of the tomatoes. Place the tomatoes in a pot of boiling water for thirty seconds, then shock in a bowl of ice water. Peel the tomatoes, the skins will peel off easily. Leave the tomatoes whole and put into a the dish in which you will be serving the salad. Sprinkle over the tomatoes, torn basil, olive oil, sugar, black pepper, sea salt and balsamic vinegar. Leave this to sit for fifteen minutes. Place pine nuts into a hot un-greased pan and toast until they are light golden brown, set aside. Cut and crumble the feta into small pieces. Skin, stone and chop the avocado. When you are ready to serve the salad, spoon the avocado, pine nuts, feta, and black olives in with the tomatoes and toss gently together. Serve with fresh crusty bread to soak up all the juices.
