Cream Cheese Brownies


Rich Brownie Batter
2oz Unsweetened Chocolate
5oz Bittersweet Chocolate
10oz Butter (room temperature)
7oz Eggs (room temperature)
9oz Sugar
1/4tsp Salt
3/2tsp vanilla
4oz Bread Flour

Cream Cheese Filling
8oz Cream Cheese
2oz Sugar
1/2tsp Vanilla
1 Egg Yolk

How to make Cream Cheese Brownies

Rich Brownie Batter
  1. Melt the chocolates and butter together in a double boiler
  2. Mix the eggs, sugar, salt, and vanilla together, do not whip.
  3. Blend the chocolate mixture into the liquids.
  4. Sift the flour into the mixture and fold.
Cream Cheese
  1. Place the cream cheese into a stand mixer with a paddle attachment and let mix at a low speed until the cream cheese is creamy.
  2. Add in the sugar and vanilla. Continue mixing at a low speed.
  3. Add the yolk into the mix, mix until blended.
Butter and flour a pan or line with parchment paper. Place the brownie batter into the pan, and add the cream cheese in large spoonfuls. Run a knife through the batter to create a marbled effect.

Place in the oven at 325° for 45 to 50 minutes, or until delicious.
