For the sponge cake
  • 4 eggs
  • 125 gm sugar
  • 100gm cake flour
  • 25 gm cocoa powder
For the filling
  • 500 ml whipping cream
  • 2 Tbsp icing sugar
  • 1 can pitted dark sweet cherries
  • 100 gm shaved chocolate
  • 300 ml water
  • 100 gm sugar
  • 1-2 Tbsp rum
  • 8 glace cherries

How to make Black Forest

For the cake
  1. Sift flour and cocoa powder together, set aside.
  2. Whisk together the eggs and sugar.
  3. Place the bowl over a saucepan of simmering water. Beat about 10 minutes or till lukewarm.
  4. Remove from heat, beat on high speed till it triples in volume and cool.
  5. Gently fold in the flour mixture to the eggs mixture.
  6. Pour batter into a 20 cm cake pan.
  7. Bake in a preheated oven at 180° for 20 to 30 minutes.
  8. Invert cake and leave to cool.

For the syrup
Boil sugar and water. When cool add rum.

Whip the cream with icing sugar until stiff.

  • Cut cake into 3 layers.
  • Place 1 layer of cake on cake stand, brush generously with the syrup.
  • Cover the cake with cream, add half of the pitted cherries.
  • Repeat with the 2nd layer of cake.
  • Place the 3rd layer and brush with syrup.
  • Frost the whole cake with the remaining whipped cream and decorate with shaved chocolate and glace cherries.
