Ingredients
- 1 large brown onion
- 750g chicken breast
- 2 corn ears
- 1/4 cauliflower head
- pumpkin chunk
- small head spinach
- 6 medium cup mushrooms
- handfull snowpeas
- 1 red capsicum
- 2 medium carrots
- handfull beans
- 1/4 head celery
- small tin corn
- "Pataks Butter Chicken Curry Paste: Tomato and Tamarind" 312g
- "Ayam Coconut Milk", 270mL can
- rice
Instructions
- fry onion
- dice chicken
- fry chicken in large pot until white
- add curry paste & stir through
- add water to cover chicken
- simmer while stirring for 10 minutes, meanwhile chopping veggies
- add harder vegies (capsicum, carrots, beans, celery, corn)
- simmer 5 minutes
- add softer veggies (cauliflower/pumpkin/spinach)
- simmer 10 minutes
- Add softest veggies (mushrooms, snowpeas, tin corn)
- simmer 5 minutes
- Add coconut cream and stir through.
- Turn off heat, allow to settle for 2 minutes, serve on rice.
